In southern France, in the Aude region, lays the historic fortified town of Carcassonne, with stratified battlements and symmetrical peaks. Its fortress is a UNESCO recognised World Heritage Site, and the town has around 47,000 residents. Don't miss the thirteenth century Cathedral, and for a real challenge, hike up to the remote, towering castle of Querebus for views across the Pyrenees.
